Black Bean Burger

This is a straightforward, but delicious recipe for black bean burgers. It's quick enough you can make them just before frying or make a day before and keep in the fridge.

INGREDIENTS TO GET READY
1 tbsp olive oil
400g black beans, drained and rinsed
2 cloves garlic
2 spring onions, sliced
30g walnuts
50g rolled oats
1/2 tsp chilli powder
1/2 tsp smoked paprika
1 tbsp Geo Watkins Mushroom Ketchup
1 tbsp red wine vinegar
1 tsp maple syrup
PUT IT TOGETHER

1. In a large bowl, mash the black beans with a fork. Stir in the oats, chopped walnuts, garlic, spring onions, dry spices, Geo Watkins Mushroom Ketchup, vinegar, and maple syrup. If the mixture does not hold together, mash the beans a little bit more.

2. Set the mixture aside for 5 minutes so that the oats have a chance to absorb any excess moisture.

3. Divide into 4 equal portions. Form each portion into a patty, firmly molding and pressing the mixture together so that it does not fall apart.

4. Heat a frying pan over medium-low heat, add the oil, and then place burgers in the pan. Cook for about 4 to 6 minutes on each side until heated through, firm and browned on both sides.

5. Serve in a bun with cheese, tomatoes, onion and avocado (optional)
